Easy Merienda with Mekeni Chicken Longanisa

We’ve been homeschooling for 3 years already and besides teaching lessons I barely can’t understand, preparing meals for lunch and merienda is one of my dilemma.
My son is a foodie ever since he learned to eat solid food. He’ll eat whatever I prepare for him on the table but he doesn’t like repeating food often, that’s why I am always on the look out of what to prepare. He is also adventurous and wanted to try different kinds of dishes. One of his dream is to be a chef someday.
I prepared a healthy sandwich with the Mekeni Chicken Longanisa in it.
I added lettuce, tomato, cucumber and sunny side up egg and surprisingly my son loves it. He was able to finish two sets of this sandwich (yes malakas sya kumain kapag gusto nya).
What does it mean for food to be ‘gluten-free’? How is it healthy?
Nutritionist Reginna Lat shares that gluten is normally found in everyday food that contain grains. Wheat and rye are the most common examples of this. Gluten-free food are usually prescribed to people who have Celiac disease or has gluten-sensitivity. But nowadays, it is observed that there is a rising interest for gluten-free food to the general public as it may help with weight loss, reduce total caloric and sugar intake, Diabetes management and sugar control, and even bloatedness. With this, the usual favorites that you and your family eat at home have now healthier alternatives and are more accessible than before.
Mekeni Chicken Longanisa Recipe by Chef Vince Garcia
A few days ago, I attended the LIVE event of Mekeni in their FB page wherein Chef Vince Garcia created a dish using Mekeni Gluten-Free Chicken Longanisa.
He made Gluten-free Mekeni Chicken Longanisa Casserole.
• 3 cups of Gluten-free
Mekeni Chicken Longanisa
• 1 cup garlic
• 1 cup onion
• 1 cup broccoli
• 1 cup cauliflower
• 1 cup black and green olives
• 1 cup beans
• 1 cup celery
• 1 cup green and red bell peppers
• 1 cup stock
• 1 cup cream
• 1 cup mozzarella cheese
• 1 cup parmesan cheese
• 2 tbsps olive oil
• 1⁄2 stick butter
• Salt and pepper to taste
- Pre-heat your non-stick pan
- Sauté garlic and onion in butter and olive oil
- Add your broccoli and cauliflower
- Add celery
- When the broccoli, cauliflower and celery are well sauteed, add the beans, black olives and gluten-free Mekeni Chicken Longanisa
- Add salt and pepper to taste
- Add stock
- Add cream and simmer for 3 to 4 minutes
- To level it up, get a ceramic bowl and put the gluten-free Mekeni Chicken
- Add parmesan and mozzarella cheese on top
- Put in the oven and bake for 10 minutes
- Serve while hot
