Hash Browns with Poached Egg: Easy and Nutritious Frozen Potato Recipe
The pandemic made me realize a lot of things. One is to have an emergency fund because you will need it when something unexpected happens. Second is to choose nutritious food that can boost the immune system because health is wealth. Third is to always tell your family you love them because you never know what tomorrow brings.
My family has been very careful and we always follow all safety protocols to avoid the Covid-19 virus, but unfortunately, we still got infected a few weeks ago. One of our dilemmas at that time, aside from being unwell, was what food to prepare that is quick and easy, and healthy at the same time. We wanted to recover fast so we were very conscious of what to put on the table.
It’s a good thing that I always stock on frozen potatoes especially hash browns. This served as our go-to food when I was suffering from terrible headaches but still needed to cook food for my family. I just threw them in the oven, added some eggs, and fresh fruits and veggies on the side then viola, our stomachs were satisfied.
Hash Browns with Poached Egg
Ingredients
- 3 pieces frozen hash browns
- 3 pieces fresh eggs
- boiling water for the egg
- salt and pepper to taste
- ¼ cup vinegar
- optional: tomato and lettuce
Preparation
- Preheat the oven to 450°F.
- Place the hash browns on a pan. No need to thaw.
- Bake until lightly browned and crisp for 10 to 15 minutes.
- Add vinegar in boiling water. Pour eggs in the boiling water.
- Turn of the heat, and then cover the pan for 4 minutes.
- Serve the egg on top of the hash brown. Add salt and pepper to taste.
- Add lettuce and tomato for additional taste and texture.
Note
For best result, follow cooking instructions of frozen potatoes as indicated on the label.
Isn’t that so easy? This recipe gave us comfort during tough times, but we continue to enjoy them now that we have recovered.
