One Week Healthy Meal Plan for the Family
Planning is one of the things we moms need to master in order to save time, energy and resources. Planning seems to be hard BUT the truth is, doing so will help you see things ahead of time and prepare properly.
Planning a one-week meal for instance will help us make grocery shopping faster and easier. I know some of you (and I am one guilty mama too) will say that there’s always fast food if there’s no food at the house (yes that’s true, but we can’t always run to this quick solution because hello! Health issue?). You want your family to be healthy, right?
That is why meal planning and home-cooked meals can save a lot of time and money.
Today, I will share with you affordable and easy to cook healthy meals that you can do at home.
One Week Healthy Meal Plan for the Family
As I have mentioned in my previous post, US Potatoes are a staple part of our grocery list. That’s because they are easy to prepare and nutritious too.
For breakfast, I usually put a hashbrown in the oven; let it cook while I’m preparing for other things like ironing Ren’s uniform or cooking for his lunch to bring to school. Talk about multi tasking here.
POWERFUL BREAKFAST
Ingredients:
1 Hashbrown
1 Egg
Any Fruits
PROCEDURE:
1. Bake the Hashbrown
2. Cook the egg as desired. I chose sunny side up and added salt to taste
3.Serve with fruits on the side.
When cooking Chicken Afritada, my kumares told me that it is best to just use US potato wedges than getting a fresh potato, cut it and then fry. It is easier to prepare plus it taste better too.
CHICKEN AFRITADA
Ingredients:
½ Kilo Chicken (I prepare thigh parts)
2 pcs. small carrots
1 pc. small red bell pepper
1 pc small onion
1 cup of Lambweston Wedge US Potatoes
1 sachet of tomato sauce
salt and pepper to taste
1 tablespoon cooking oil
PROCEDURE:
1. Fry the US Potatoes wedges first. Set aside.
2. In the same pan, put oil then sautee the onion
3. Add the chicken. Cook until tender.
4. Add tomato sauce and carrots
5. Add the red bell pepper and salt + pepper to taste
5. When the carrots are cooked, serve in a bowl. Add the cooked potato wedges and serve hot.
Friday is Ren’s friesday. Instead of buying from the store, I decided to prepare fries at home (yes complete with burger). We usually eat it while watching our favorite movies or TV series.
BEEFY CHEESEBURGER WITH FRIES ON THE SIDE
Ingredients:
Beef Patties
Hamburger bun
lettuce
cucumber
banana/tomato catsup
cheese slices
Lambweston Crinkle Cut Fries
Cooking Oil
Procedure:
1. Put some oil in a non stick frying pan, then cook the frozen crinkle cut fries (no need to defrost). Set aside.
2. On the same pan, cook the burger patties. Turn on each side to make sure they are equally cooked. The meat should turn into brown when cooked.
3. On a clean plate, put the hamburger bun. Spread catsup then add the beef patty. Afterwards, add some lettuce and cut cucumber slices. Lastly add the sliced cheese.
4. Serve with the crinkle cut fries on the side.
Most of the dishes I have posted here will only take you less than 30 minutes to prepare . Plus they are not that expensive at all (well, of course the amount depends on the number of members of your family).
I also added an exercise row to motivate and remind me to move that day.
I suggest you stock up on US Potatoes so that you’ll have something to prepare easily when you’re feeling hungry.

I love POTATOES! I haven’t tried this brand. Wala pa akong pumapasok na toddler kaya di pa ako gano hirap mag multi-task but I agree, it is easier to prepare. Thank you for the recipes. Will try the chicken afritada with fried potatoes.
